Back to School with Shamrock Farms! Roxie’s Midday Menu + $4,999 Giveaway!
Can you believe fall is almost here! I mean, where did the Summer go anyway? They do say time flies when you’re having fun, but seriously! With Fall comes back to school, hoodies, apple picking, and other exciting things so I guess I can’t be too upset. Right?
As most of you know, little Josephine started preschool this week which is a huge adjustment for us. Now I have 2 sets of lunches to make and 2 sets of snacks to think about. I’m not one to run out and buy a bunch of processed snacks in a box and send them on their way. At least not all of the time..
That’s why I am super thankful to have been given the opportunity to partner up with Shamrock Farms! They promise that every single product they make will be a real, wholesome dairy product that’s freshest from their farm to you, so it tastes the best. This is perfect for my family!
If you have never heard of Shamrock Farms you can read all about them HERE! There was so much history that I never knew about.
Anyway, on their site you can also find so many delicious recipes that are made with their products. This comes in handy for me since I lack creative juices in the kitchen. And given the fact that I was given a strict “healthy snacks only” letter from preschool their recipes are perfect!

-Chocolate Chocolate-Chip Pudding
The kids are crazy for this one!
– Fruit Bars
Last, but not least I must say that this is by far my favorite. My kids keep begging me to make these Banana Rolls all of the time now… Which happen to go perfect with Shamrock Farms Chocolate Milk. I adapted mine just a tiny bit, but the recipe is from Shamrock Farms
Ingredients
- 1-2 tsp honey or agave nectar
- ½ cup peanut butter or cream cheese
- Pinch of cinnamon
- 2 bananas
- 2 whole wheat tortillas
- Toothpicks
Directions
Mix the honey (or agave nectar), peanut butter (or cream cheese), and cinnamon in a bowl. Spread mixture onto the tortillas. Place a whole banana on each tortilla and roll up. Toast until golden brown on each side in a pan. Slice into ½ inch rounds, then serve with toothpicks.
