Blueberry Stuffed French Toast
It’s not very often that I make breakfast. My family will tell you that I can eat cereal all day every day. But because that’s not very healthy nor is it practical, I have to cook from time to time. I just love this Blueberry Stuffed French Toast recipe because it’s super easy to make and it taste incredible. If you love fruit, french toast and a warm, delicious breakfast you’re going to love this recipe as much as we do!
Ingredients:
- Eggs
- Bread (we used Nature’s Harvest®)
- Vanilla
Filling:
- 8 oz Cream cheese, room temperature and softened
- 2 tbs Powdered sugar (optional)
- 1/2 can blueberry preserves
- Fresh blueberries
Whisk together eggs and vanilla creamer.
Use your cookie cutters to cut shapes into each piece of bread. These are perfect for dipping! Set the leftover bread with the hole in the middle to the side. You will be needing those in just a bit.
Once you have all of your shapes cut, they are ready for the pan. Make sure you spray your pan well so the shapes stay intact. Dip shapes in egg mixture and make sure each side is completely covered. Cook until each side until beautifully, golden brown.
Preparing the cream cheese filling by blending together cream cheese (softened), powdered sugar and about 2 tablespoons of the juice from the blueberries, until well blended with a hand or stand mixer.
The whale shaped french toast were the perfect size for Josephine to dip into the blueberry & cream cheese mixture. We took the shapes one step further and made little blueberry & cream cheese stuffed clam shells. Spread the mixture on the bottom layer of the clam, add a few blueberries and slap on the top layer of bread. Viola, you have blueberry stuffed french toast!
Remember those pieces of bread we had left over from the cookie cutter shapes? Dip them in egg and make stuffed french toast out of those also. I am way too frugal to let them go to waste. Put a whole piece of french toast on your plate. Cover in a generous layer of your blueberry & cream cheese mixture. Lay your cooked piece of bread with the shape on top. I then filled the remaining space of the hole with the blueberry preserves. AMAZING!
You literally just made a breakfast that will please the entire family! Who knew such a thing could be done… You can make this delicious stuffed french toast with any kind of fruit. It’s super easy to do and I have yet to hear a single complaint. Total win in my book!
