I made these pumpkin chocolate chip pancake bites for the girls a few days ago and now they are hooked. For me, nothing beats an easy-to-make breakfast.

You can make these pancake bites, throw them in a baggie and have breakfast on the go without the mess. We often have soccer games really early in the morning and don’t always have time for breakfast before we leave. It’s easy to make up a batch of these pumpkin chocolate chip pancake bites the night before and not have to worry about making anything when you wake up.

(Yield 20 pancake bites)
- 1 cup Flour
- 1 tsp Baking Powder
- 2 tsp Sugar
- 1/2 tsp Cinnamon
- 1 beaten Egg
- 3 tbsp Pumpkin Puree
- 1/2 tsp Vanilla
- 1/2 cup Milk
- 2 tbsp melted Butter
- 1/3 cup Chocolate Chips
Preheat oven to 375.
Spray the donut hole pan with a nonstick spray.
Whisk together flour, baking powder, cinnamon, nutmeg and sugar until fully blended.
Fill each hole about 3/4 full.
Serve with syrup, glaze or dusted with powdered sugar, if desired.
