Coconut Banana Fritters
Coconut banana fritters are super-easy to make and require very little effort. They are pretty sweet yet contain no added sugar so you don’t have to worry about a sugar overload. All natural sweetness is the trick in making this dessert taste amazing, which means they are perfect for kids as well. There’s no room for artificial ingredients or preservatives in this recipe because they are simply not needed! There’s no need to feel guilty when you pop one in your mouth! All you will taste is coconut banana deliciousness! What more could you need? My girls love to dip these in this homemade whipped cream we make. It’s SO good and the ingredients are all natural as well.
Batter
- 2 cups flour, all-purpose
- 1 tablespoon baking powder
- 1 egg
- 1 tablespoon cooking oil (or coconut or)
- 3⁄4 cup cream of coconut or 3⁄4 cup coconut milk, canned
- 1⁄2 cup water
- 1 pinch salt
Bananas
- 5 bananas, peeled and cut diagonally
- 2 tablespoons maple syrup
- 1 fresh, lime, juice of
- 3 tablespoons dark rum
- cooking oil, enough to cover the bottom of the heavy skillet to 1 1/2 inch
In a medium-size mixing bowl, combine all batter ingredients together and mix well. Set mixture aside until ready to use.
Sprinkle cut bananas with sugar, lime juice and rum. Let them marinate for 1 hour.
Heat the cooking oil to cover in a medium saucepan.
Dip the marinated bananas into the batter and quickly fry in hot oil, turning just once.
Sprinkle them with toasted coconut and serve immediately.
Optional: Garnish the plate with Chocolate syrup in decorative swirls.
