These no-bake energy bites are exactly what your afternoon is missing. Just one bite, and you will see why.
Three cheers for no-bake energy bites.
I mean seriously, anything no-bake is a win in my book, especially if there’s going to be energy involved. By the time I get the kids off to school, drop the dog off for his puppy school, clean up the kitchen mess from breakfast, check emails and all of the many other morning routine shenanigans, I’m exhausted! There are more mornings than I care to admit where an afternoon pick-me-up is needed.
This is exactly why I am so in love with this no-bake energy bites recipe. They are the perfect size to pop on the go. I usually have all of the ingredients needed for these yummy energy bites, but if not, I head over to Giant Eagle for some one-stop shopping.
Ingredients:
- 1 cup dry oatmeal
- 1/2 cup peanut butter
- 1/2 cup ground flax seeds
- 1/2 cup semisweet chocolate chips
- 1/3 cup honey
- 1 tablespoon chia seeds
- Almonds (optional)
Add oatmeal, chia seeds and flax seeds into a large bowl and mix well. Add the peanut butter and honey. Continue to blend until the oatmeal is well coated. Blend in the chocolate chips.
Line a baking sheet with parchment paper. Roll the dough into bite-sized balls and place evenly onto the baking sheet. Place the energy bites into the fridge for about 20 minutes, or until firm.
Place into an airtight container for storage. Your no-bake energy bites will be good for up to five days!
When I have a ton of errands to run, I throw a few of these bad boys in a baggie and toss in my purse.
