Mexican Fajita Pasta
This delicious Mexican Fajita Pasta is a fast weeknight meal with savory southwest flavors that your entire family will love. You can shake things up a bit by adding chicken or probably even some sausage depending on your family’s tastes, but for us, this recipe is great for “meatless Monday”. Meatless Monday is a great way to cut down on your grocery bill as well as a way to explore different meals options outside of the norm.
My kids actually love this Mexican Fajita Pasta recipe, which is weird considering I usually cook for people that “aren’t hungry”. I never get that response when I set this delicious dish on the table. Are your kids as picky as mine? This is the perfect recipe for you!
Ingredients
- 1 Pound Pasta
- 1 Avocado
- ½ Cup olive oil
- 1 Clove garlic
- Lime juice
- Salt and pepper to taste
- Tomato sauce
- Shredded chicken
- Cilantro to decorate
Directions
Prepare pasta according to directions. Set aside.
While the pasta is cooking place the avocado, olive oil, garlic, lime juice and salt and pepper into a food processor or blender. Blend until creamy.
Place in a pan the shredded chicken, cooked pasta, tomato sauce and avocado sauce. Toss until the pasta is coated.
Serve, top with cilantro and enjoy
Tips
- It’s great because you can substitute a lot of the ingredients used in this recipe for other things you have on hand. Maybe swap out the chicken for some ground beef or take out the avocado sauce.
- You can also make it a pasta bake. Continue where we left the recipe place in a baking pan and cover with shredded cheese. Bake for 15 minutes or until the cheese is melted.
