Fall is in the air and this tortilla soup with zucchini should be on your stovetop. It’s easy to make and even easier to eat.
With the changing of the season comes a change in all of our schedules as well. Since my oldest daughter plays soccer, that usually means a lot of long days and not a lot of time to slave over a stove for a hot meal. That’s exactly why this tortilla soup with zucchini is my favorite go-to recipe.
This is my favorite ‘meatless Monday’ recipe but you can add chicken if you prefer. I choose to load mine up with veggies! Either way, I just know you’re going to love this recipe as much as we do.
Ingredients
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 tablespoons minced garlic
- 8 cups low-sodium chicken broth
- 1 14.5-ounce can black beans, rinsed and drained
- 2 limes, juiced, plus wedges for garnish
- 1 cup roughly chopped fresh cilantro leaves
- Salt and black pepper to taste
Garnish

- Sour cream
- Crushed tortilla chips (or strips)
- Shredded Cheese (or Moon Cheese)
In a large saucepan heat the vegetable oil to saute the onions for 2 minutes. Once the onions have softened add the garlic and cook for another minute. Pour the chicken broth and beans into the pot. Bring to a boil. Once at a boil lower heat to simmer. Simmer for 10 minutes. Add lime juice and fresh cilantro to the pot.
Serve with sour cream, crushed tortilla chips and shredded cheese. Since I like a little bit of crunch in my soups, I added Pepper Jack Moom Cheese instead of shredded cheese this time around. I love how much flavor and the right amount of spice the Pepper Jack gives this tortilla soup.
