As many of you know, my daughter Josephine can no longer have dairy or gluten. Since this is all new to me, I’m constantly looking for recipes that we can all enjoy without doubling our grocery budget. This Watermelon Key Lime Slushie recipe has quickly become a household favorite!
While eating differently has been somewhat of a learning curve for me, I am enjoying the learning process. It’s so easy to run to the freezer and grab a scoop of ice cream whenever a craving for something sweet hit. Now, I am exploring all options and actually sending more time in the kitchen – with the girls!
You can use just about any fruit to make a slushie, but there’s something about these Watermelon Key Lime Slushie that hits the spot for us. All of the ingredients are simple, pure and taste amazing together. And since they are allergy friendly, these slushies are perfect for everyone.
If you don’t want to add sugar, there’s plenty of sugar substitutes you can use as well.
(Yield about 3 1/2 cups)
INGREDIENTS
- 3 cup watermelon cut in cubes
- 6-8 key limes
- 1/4 cup pure cane sugar
- 2 cups ice
DIRECTIONS
Place your watermelon cubes in the freezer for 1 hour to chill.
In the meantime, zest key limes. Cut and squeeze the juice into a small bowl.
Add frozen watermelon cubes to a blender.
Add sugar, lime juice and lime zest.
Pulse until blended. If it seems too thick you can add up to 1/2 cup water. You don’t want it to be too runny, though.
Add crushed ice and blend until slushie consistency.
Transfer to glasses and garnish with key line slices. Enjoy!
